We love to make salads to devour after our hikes. Our favorite is a “chopped salad”. We chop up romaine lettuce and add in black olives, red onion, red pepper and feta cheese. I make a homemade vinaigrette of mustard and olive oil. I find that grey poupon works best. In one bag, I have the chopped lettuce and in the other I mix the sides with the vinaigrette. When we get to the picnic site we mix everything together in the salad bag. This salad works best after a long hike on a hot day, it is so refreshing.
